  • Chef's Special - Braised Lamb Shank

    Ingredients: To cook the Lamb Shanks To cook the Garlic and Rosemary Sauce 2 tbsp olive oil 400ml Red Wine 2 lamb shanks 400l Beef Stock ½ onion roughly chopped 1 crushed clove of garlic 1 carrot roughly chopped ¼ diced onion Few Sprigs of Rosemary 2 chopped tomatoes (de-seeded) 1 Garlic Clove , left whole 1 sprig of rosemary 1 tbsp plain flour Corn flour 350ml of red wine 1 litre of lamb or chicken stock Heat oven to 200C/fan 180C/gas 6. Pour the oil in a casserole dish or roasting tray large enough to fit the shanks. Spend a good 10 mins browning the lamb all over. Remove the lamb, add the onion and carrot and cook for 10 mins until starting to brown. Stir in the herbs and garlic and cook for a few mins more. Stir in the flour and tomato purée, season well then pour over the wine and stock. Return the lamb shanks to the pan. Bring to a simmer, cover with a lid or tightly with foil and cook, undisturbed, for 1½-2 hrs until lamb is tender. Remove the lamb and set aside. Now to make the sauce. Sautee the onion, this shouldn’t take long. Then add the crushed garlic and continue to fry. Stir in your chopped tomatoes and allow simmer to for a moment. Pour in the red wine and beef stock and reduce the mixture by half. Then thicken the sauce with corn flour and add rosemary. Allow to thicken nicely and then serve with the lamb.
